3 Easy & Healthy Desserts – Nut Butter Edition
All these easy healthy desserts take around 5 minutes to make. While you can eat them right away, for the first two it’s best advised to let them chill in the freezer after which they’ll taste even better.
The best part is that these desserts require primarily natural ingredients with many you probably already have readily available in your home. Honestly, given these ingredients, you could even eat these for breakfast.

All these recipes are plant based, gluten free, sugar free (not including natural sugar), vegan, vegetarian, and most of all DELICIOUS.
Nut Butter Dates
This recipe is so easy it’s almost too good to be true. The moment I discovered this combination I have been addicted. Nut butter in dates is one thing. But nut butter in dates AND frozen is a new planet.
Tip: If you use a nut butter mix that includes coconut butter or coconut oil, the nut butter will harden more in the freezer which is a nice touch.
Nut Butter Dates
The perfect combination – dates and nut butter! Nut butter – whether it be peanut butter, cashew butter, or almond butter – always pairs great with sweetness. So why not pair it with natural sweetness?
Ingredients
- 5 medjool dates
- 3 tbsp nut butter (peanut butter, almond butter, cashew butter, etc.)*
Instructions
- open the medjool dates and unpit them
- fill each date with a little less than 2 tsp of nut butter
- place in freeze safe container and put in freezer
- store in freezer **
Notes
*give it a try: using a blend of nut butter and coconut butter/oil will make the inside more firm
**taste best frozen but still tastes good fresh
Protein Nut Butter Bars
Protein and nut butter, especially peanut butter, is a classic combination. The problem is many protein powders are filled with unnecessary processed ingredients.
This recipe uses plain unsweetened protein powder such as the Organic Pea Protein Powder Unsweetened from Trader Joe’s. Combining that with natural sweeteners such as maple syrup, date syrup, or honey is enough to provide the right taste in these bars.
If you’ve had Perfect Bars, imagine that but homemade and cheaper.
Protein Nut Butter Bars
Imagine a customized healthier and arguably yummier Perfect Bar bar. This is a creamy and easy delight.
Ingredients
- 1/2 c nut butter
- 1 tbsp liquid sweetner (date syrup, maple syrup, etc.)
- 1/8 c plain protein powder*
- 1/8 c coconut flour
- small sprinkle sea salt
- 1/8 c chocolate chips
Instructions
- mix peanut butter and sweetener in a bowl until evenly combined
- add in everything else but the chocolate chips and mix until liquid has absorbed into the dry ingredients and formed a dough
- press into a freeze safe container lined with parchment paper (or reusable alternative)
- press in chocolate chips
- freeze for 15 min and cut into bar sizes
- store in freezer (or fridge if prefer)

* i recommend Trader Joe's pea protein powder unsweetened
Date Nut Butter Rice Cakes
Another recipe with dates? What can I say, they’re one of the best ways to get a naturally sweet flavor.
While these recipes all include nut butter, additional nuts and seeds can add a great touch. Here are some of my favorites to include in the recipe below:
- Nuts: almonds, cashews, walnuts, pecan, pistachio
- Seeds: hemp, chia, flax, pumpkin, sunflower

- Nuts: slivered almonds
- Seeds: pumpkin, hemp, flax meal, chia
- Cacao nibs
With these date nut butter rice cakes, you can add whatever nuts and seeds you have lying around in the pantry. Oh, and have you seen that instructions list? The longest part is gathering those toppings you want to add.

The best part about these rice cakes is the combination of dates and nuts/seeds. The dates add a lovely sweet flavor that's 100% natural, and the nuts and seeds provide a satisfying crunch.
Ingredients
- 4 rice cakes
- 3 tbsp nut butter
- 2 medjool dates (chopped)
- 3 tbsp nuts (chopped)/seeds
- optional: sprinkle of cacao nibs
Instructions
- spread nut butter on rice cakes
- add rest of ingredients on rice cakes
